01 - 1 large red bell pepper, seeded and sliced into strips
02 - 1 large yellow bell pepper, seeded and sliced into strips
03 - 1 large green bell pepper, seeded and sliced into strips
→ Dip
04 - 1 cup plain Greek yogurt
05 - 2 tablespoons fresh chives, finely chopped
06 - 1 tablespoon fresh parsley, finely chopped
07 - 1 teaspoon lemon juice
08 - 1 small garlic clove, finely minced
09 - 1/4 teaspoon salt
10 - 1/4 teaspoon freshly ground black pepper
11 - 1 tablespoon extra-virgin olive oil (optional)
# Method:
01 - Wash and dry bell peppers. Remove stems and seeds, then slice into even strips.
02 - Place bell pepper strips radiating from the center of a large serving platter, leaving space for the dip bowl in the middle.
03 - Combine Greek yogurt, chopped chives, parsley, lemon juice, minced garlic, salt, and pepper in a medium bowl. Stir well to blend. For a creamier texture, add olive oil and mix thoroughly.
04 - Transfer the dip into a small serving bowl and position it at the center of the platter. Serve immediately or refrigerate until needed.
